This is an END GRAIN butcher block.  Meaning the cross cuts of the wood are facing up. When a knife cuts in to the wood, the blade will enter the grains and "heal" itself more naturally.  End grain block also will not dull your knife blade as quickly as other types of blocks.  In contrast, rip grain butcher block will show cut marks much quicker and will not go away like an end grain block. Plus, these blocks are reversable.  They are the same on either side.  You can use one side for cutting and other side for show. These blocks are built to survive generation to generation.  If you ever want to make it look brand new again, simply take it to anyone who has a belt sander.  Or just buy some sand paper, this will take a little more elbow grease though. Due to it's thickness, these can be resurfaced many, many times to make it look brand new again. This design was brought to me by an previous customer.  He loved the 2 blocks he had purchased from me, and wanted something special for a friend in the Navy.  He asked if I could pattern the US flag in an end grain block.  I liked the end product so much that I had to build another to offer to the entire eBay community.  Although the time to build this block is much more extensive than most blocks I build, the time is worth the end product.
